Green Lentils and Spinach

I use Puy lentils to make this dish as they don’t take as long to cook and you don’t have to soak them. This is also lovely eaten cold as a nutritious salad.
Ingredients
250g Puy lentils
600g baby Spinach
leaves or chopped Spinach
½ big jar Marawadi paste
500ml water
1tbs lemon juice (optional)
Cooking instructions
1. In a large pan add the rinsed lentils, the paste and water bring to the boil and simmer for 25 minutes.
2. Add the baby Spinach leaves and stir through until the spinach has wilted
3. Cover and simmer for 10 minutes. The dish should be quite dry, add lemon juice if using and serve
Nanima's Tip
If your using green lentils soak for at least 4 hours, and the cooking time will be longer. Try using chicken stock for added flavour
