Quick and Easy Indian Dinner Party

Use Nanima's kitchen's authentic paste for a quick and easy dinner party, and to make it easier, cheat by getting the nan and pappadoms from the supermarket

 

Pappadoms

Cucumber Riata

Ingredients
150g grated cucumber
200ml natural greek-style yogurt
1/4 tsp black pepper
1tbsp finely chopped mint and coriander leaves
salt to taste
Combine all the ingredients in a bowl, mix and chill


Chicken and Potato Kerala Style

Ingredients
2 large chicken breast
2 medium potatoes cubed
1 tsp salt
3 tbsp coconut oil or sunflower oil
2 tbsp Kerala Paste
200ml coconut milk
100ml water
1 tbsp lemon juice
1 tbsp fresh chopped coriander (optional)

Vegetable Dall

Ingredients
250g cooked toovar dall (split pigeon peas) or red lentils
250g mixed vegetables (cauliflower, carrots, potatoes, peas, green beans)
2tbsp Gujarati Dall paste
2tbsp sunflower oil
500ml water
1tbsp lemon juice
1tbsp chopped coriander (optional)

Cobi Nu Shak (Cabbage stir-fry)

Ingredients
500g shredded cabbage
1tbsp Marawadi paste
2tbsp sunflower oil
1tbsp lemon juice
1tbsp chopped coriander (optional)

Ingredients
500g Basmati rice
1 litre water
Salt to taste if using

Quick Nans

Ingredients
300g Self Raising flour
1 tbsp natural yogurt
1 tsp salt
200 ml tepid water
Butter for brushing

Sliced mango with saffron cream

Ingredients
2 large mango
250ml single cream
1 pinch of saffron
Combine the single cream and saffron together and leave to infuse.
Skin the mango and slice arrange onto small plates.
Serve with saffron cream
