Rogan Josh

A staple of most good indian kitchens, use lamb on the bone for more flavour. Lamb cooked on the bone always tastes so much better, a warming dish for cold winter days. 

Lamb Rogan Josh

500gm boneless leg or shoulder of lamb cubed
1 medium onion, cut into thin slices
1 medium tomato, cut into chunks
3 tbsp Punjabi paste
2tbsp oil
200ml water
2tbs chopped coriander

Cooking Instructions

1. Heat the oil in a pan, add the Punjabi paste and fry for 30 seconds, 
2. Add the meat and fry for 5 minutes.
3. Add the onions and fry for further minute then add the water and bring to boil
4. Reduce the heat and simmer for 2 hours until the meat is tender 
5. Finally add the tomato, lemon juice and chopped coriander, mix well and serve

Try making chappatis to accompany the Rogan Josh or you can buy ready made nans from the supermarket.
