This menu suggestion is enough for 4 people, if you don’t want to make the chappatis, use flour tortilla or wraps from supermarkets, just warm through and brush with ghee or butter if you want.

500gm boneless leg or shoulder of Lamb cubed
1 medium onion, cut into thin slices
1 medium tomato, cut into chunks
3tbsp Punjabi paste
2tbsp oil
200ml water
2tbsp chopped coriander

500g small new potatoes cooked and peeled. 100ml water 2tbsp oil 3tbsp Marawadi paste 2tbs chopped coriander 1tbs lemon juice

300g Basmati rice
600ml water

Cucumber Riata
150g grated cucumber
200ml natural greek-style yogurt
1/4 tsp salt
1/4 tsp black pepper
1tbsp finely chopped coriander and mint leaves
salt to taste
Combine all the ingredients in a bowl and mix well, chill in the fridge.
