Bhindi Kadhi (Okra in yogurt curry)
Bhindi or Okra is lovely when fried in oil and this sweet and sour curry combined with different vegetables is a very popular dish in a Gujarati meal.
Ingredients
250g Bhindi/Okra
2 tbsp gram flour
500ml buttermilk or half water and half yogurt
1 tbsp Gujarati Dall paste
1 tbsp brown sugar
1 tbsp oil
1 tbsp chopped coriander ( optional)
Oil for shallow frying
Cooking instructions
1. Wipe the whole bhindi with a damp cloth and discard the tops and cut into 1cm pieces.
2. Shallow fry the bhindi until crispy, cook in small batches, drain and set aside.
3. In a dry frying pan, dry roast the gram flour turning constantly until it darkens. Add to the buttermilk and whisk thoroughly.
4. Heat the oil in a pan, add the paste and fry for 1 minute
5. Add the buttermilk mixture, sugar and simmer gently until it thickens.
6. Just before serving, stir in the crispy bhindi, simmer for 2 minutes and garnish with the chopped coriander.

To make buttermilk mix together equal quantities of natural yogurt and water.
