Cucumber Riata

This cooling yogurt dish works well as an accompaniment to most Indian meals, also works as a dip for pappadoms too.

Ingredients

150g grated cucumber
200ml natural greek-style yogurt
1/4 tsp salt
1tsp sugar
1/4 tsp black pepper
1tbs finely chopped coriander

Cooking Instructions

Combine all the ingredients in a bowl and mix well, chill in the fridge.

You can use grated onions, grated carrots, diced tomatoes seeds removed or diced cooked beetroot for a change.
