Known as the “The Palace State” Rajastan has seen many visitors such as the Turks, Persians and Afghans. Rajastan is a desert state and very few vegetables grow in the region, so cereals are a staple food here and wheat-flour is used to make rotis, puris, parathas and bati (baked balls of wholemeal flour). Traditionally eaten broken up, soaked in ghee and mix with spicy dall. Rajastani prefer their meat and vegetables roasted, then spiced and served with yoghurt.

Other grains such as barley, millet and corn are used to make thick rotla, eaten with kadhi, which is a sour, spicy soup, made from yogurt, Another favourite is khichdi, made using a mix of rice and lentils. The natives of Rajasthan, the Marawadis, are strict Hindus and therefore vegetarian.

The Marawadi kitchen is a sacred place; the cook has to bathe before entering the kitchen and the food is offered to God before serving.  Marawadi paste is suitable for any curry, or for those that don’t like garlic or onions. Try this with sweet corn and ground roasted peanuts for an unusual curry.
